Instructions
- Roast the makhana – Heat 1/2 tbsp ghee in a heavy-bottomed pan over medium-low heat. Add 2 cups of makhana and roast until they are crispy and break easily, for about 5-7 minutes. Remove and set aside
- Roast the nuts and seed – In the same pan, add the remaining ghee and add peanuts, cashews, and seeds, roasting until they turn light golden brown.
- Add spices – Lower the heat. Mix in the salt, chaat masala, turmeric and chilli powder.
- Combine – add the roasted makhana back into the pan. Toss everything well for 1-2 minutes, until everything is evenly coated.
- Cool – let the mixture cool completely before storing in an airtight container.
Makhana Kheer
Roasted makhana kheer is a creamy and healthy dessert made with roasted makhana, milk, sugar, and dry fruits. It is a fast cooking dish which is popular for festivals and special occasions. Makhana kheer can be served warm or chilled.

- 3-4 cups Full Cream Milk

- 8-10 Saffron Strands
Instructions
- Roast the Makhana: Heat 1-2 tbsp ghee in a heavy-bottomed pan, add makhana, and roast on low-medium flame until they become crunchy.
- Prep the Roasted Makhana: Once cooled, grind half of the roasted makhana into a coarse powder (using a mixer or crushing in a bag).
- Boil the Milk: In the same pan, heat the milk and bring to a boil. Reduce heat and add the ground and whole makhana.
- Simmer: Simmer for 10–15 minutes, stirring frequently, until the milk reduces and thickens to a creamy consistency.
- Add Flavour and Sweetener: Add sugar, cardamom powder, and saffron. Simmer for another 2-3 minutes.
- Add Nuts: Heat the remaining 1 tsp ghee, roast the nuts and raisins, and add them to the kheer.
- Serve: Turn off the heat. Serve warm or chilled.
